Quietly brewed

We didn’t sit down one day and say, let’s start a café. It happened slowly, in between the coffees we made for each other, the nights we stayed up talking about what makes us feel at home, and the little scribbles of ideas that refused to go away.

ANKO is not just ours anymore. It’s a piece of our story, yes, but it’s also a space where your stories can begin over a brew, over bread fresh from the oven, over moments that linger.

Meet the founders

Viggy & Shindo

We never thought this little love for coffee would take us this far. What began as an interest slowly pulled us deeper, until ANKO became part of our everyday thoughts, our late-night talks, and our quiet dreams.

For Ten months, we lived inside this project. Not just as planners, but as learners, as baristas, as two people figuring it all out one step at a time. We brewed, we tasted, we got it wrong, we tried again and somewhere in that rhythm, ANKO started to take shape.

This space holds a lot of us our calm, our care, and our story. And every time we see someone sit down with a cup here, it feels like all of it was worth it.

— Sindhu & Vignesh

When you step into ANKO, it doesn’t feel like you’ve entered a café. It feels like you’ve walked into a pause button. There’s this subtleness in the air the kind that doesn’t try too hard, yet settles into you so easily. The sounds are gentle, the light is soft, and the calm sort of grows on you without you even realizing it.

It’s not loud. It’s not rushed. It’s just a space that lets you be. Whether you’re here with friends, by yourself, or just passing through, ANKO holds a certain quietness that feels grounding. The little details the way coffee is poured, the slow bake of bread, the ease of sitting down it all speaks in whispers, not shouts.

There’s a calmness that belongs here, like the space is in no hurry for you to leave. You might come in for coffee, but it’s the subtleness, the stillness, that makes you want to stay a little longer.

“From the sawdust on the ground to the mounted taxidermy on the walls, Palmer is where modern Texans go to relive the turn of the 19th century. Their dishes are simple, hearty, fresh, and all-around delicious.”

— FOOD MAGAZINE

“By focusing purely on food and ambience, Palmer provides the authenticity of the Old West without the costumes and playacting of a themed restaurant. You can bring your cowboy boots if you want, but the humble and relaxed atmosphere asks that you come as you are.”

— HUNGRY TIMES

“Ms. Blackburn has surprised us with her ability to turn pioneer staples into gourmet delights. Her signature cocktails are not merely couched in nostalgia, but are a genuine rebirth of western saloon classics.”
